The equipment in brief

Key advantages

Change the die, change the product

Dumplings, ravioli, cappelletti, tortelloni on one machine. The range does not require a second line.

Built for round-the-clock work

This is an industrial machine, not a reinforced semi-automatic: it holds 150 cycles a minute shift after shift.

The forming machine sets the thickness

The sheeter delivers a sheet of fixed thickness, about 8 mm. The final 0.5–0.6 mm is set by the roller gap of the DN250 calibrating group — this is what regulates the weight of the blank and the dough-to-filling ratio.

Two units, not half a workshop

A footprint of 2562 × 1442 mm. It goes where a large line simply would not fit.

Stainless steel and food-grade belts

Everything that touches the dough is stainless steel and certified food-grade material. CE compliant.

A step up the range

When the volume grows, the DN320 and DN540 work on the same principle — the staff do not learn from scratch.

Who this equipment is for

The DN250 is chosen where dumplings can no longer be made by hand:

How it works

  1. MixingThe dough is prepared in a mixer and fed to the sheeter.
  2. SheetingThe CA250V laminates the dough between rollers and delivers a 250 mm sheet about 8 mm thick.
  3. Sheet feedingA conveyor feeds the sheet straight to the forming machine; a photocell controls the slack of the loop.
  4. CalibratingRollers with an adjustable gap bring the sheet down to 0.5–0.6 mm — this is what sets the weight of the blank.
  5. FormingThe DN250 doses the filling and forms the product with an interchangeable die.
  6. OutfeedThe finished products go onto the conveyor — on to freezing or packing.

Purpose

An industrial line for producing single-sheet dough products — dumplings, ravioli, cappelletti and tortelloni. The CA250V sheeter laminates the dough between rollers and feeds a 250 mm sheet to the DN250 forming machine, which calibrates it to the required thickness, doses the filling and shapes the product with an interchangeable die. The machine is designed for round-the-clock operation and reaches up to 150 cycles per minute.

Line composition

Both machines are made entirely of stainless steel, fitted with a control panel and an electrical cabinet with safety devices in line with CE standards, and supplied with operating tooling and an instruction manual.

Calculating the output. The forming machine is limited by the number of cycles per minute. The output is calculated as: cycles per minute × products per cycle × weight of one product × 60. On average the forming machine runs at about 90 cycles per minute (up to 110). The number of products per cycle is set by the die, so the actual output depends on the chosen shape and product weight. The figures given are indicative.

Product range and dies

DN series lines with interchangeable dies produce single-sheet dough products: dumplings, ravioli, cappelletti, tortelloni, pinzati and other shapes. One die is included with the forming machine and the shape is chosen by the customer; additional dies, including custom shapes, are made to order. The full AL.MA. shape catalogue is included in the PDF datasheet.

Weight, dimensions and output are indicative and may vary depending on the dough sheet thickness and the dough-to-filling ratio.
