Key advantages

Less demanding on flour quality

The press forces the dough through a die, so the line runs more steadily on flour of variable quality than a line with a sheeter.

The die sets the sheet format

An interchangeable die gives a sheet 6–8 mm thick to suit the format. The final thickness is set on the DN250 calibrating group.

A cooled extrusion cylinder

Friction and pressure in the screw heat the dough. The extrusion cylinder is cooled so that the sheet does not come out overheated.

The die sets the product

Dumplings, ravioli, cappelletti, tortelloni on the same forming machine.

Up to 150 cycles a minute

The DN250 forming machine is designed for round-the-clock work.

Stainless steel and CE

Certified food-grade materials in contact with the product, declaration of conformity.

Who this equipment is for

The extruder version is chosen where continuity matters:

Purpose

An industrial line for producing single-sheet dough products — dumplings, ravioli, cappelletti and tortelloni. The PA150 extruder press processes the dough continuously and delivers the dough sheet through a die plate; the DN250 forming machine calibrates the sheet to the required thickness, doses the filling and shapes the product with an interchangeable die. The machine is designed for round-the-clock operation and reaches up to 150 cycles per minute.

Line composition

Both machines are made entirely of stainless steel, fitted with a control panel and an electrical cabinet with safety devices in line with CE standards, and supplied with operating tooling, an instruction manual and a CE declaration of conformity.

PA150 extruder press

A press for continuous dough processing and production of short and long pasta as well as lasagne dough sheet. Within this line it works as a sheet source for the forming machine.

Calculating the output. The forming machine is limited by the number of cycles per minute. The output is calculated as: cycles per minute × products per cycle × weight of one product × 60. On average the forming machine runs at about 90 cycles per minute (up to 110). The number of products per cycle is set by the die, so the actual output depends on the chosen shape and product weight. The figures given are indicative.

Difference from the line with the CA250V sheeter

The difference between the lines is not in how the sheet is fed but in how it is made. The CA250V sheeter rolls the dough out gradually between rollers: the stress is moderate, there is almost no heating, and the sheet stays softer and more pliable. The PA150 press forces the dough through a die under pressure — friction and pressure raise the temperature, the dough takes more punishment, and the sheet comes out denser, with a different structure; a cooled extrusion cylinder counteracts the heating.

The practical difference on the floor: the press is less demanding on flour quality. The taste and colour of the cooked product differ between the two methods — a matter of preference rather than one method being better than the other.

In both versions the sheet is fed to the forming machine continuously, under photocell control, and the final thickness is set by the DN250 calibrating group.

Product range and dies

DN series lines with interchangeable dies produce single-sheet dough products: dumplings, ravioli, cappelletti, tortelloni, pinzati and other shapes. One die is included with the forming machine and the shape is chosen by the customer; additional dies, including custom shapes, are made to order. The full AL.MA. shape catalogue is included in the PDF datasheet.

Weight, dimensions and output are indicative and may vary depending on the dough sheet thickness and the dough-to-filling ratio.

Not sure which configuration you need?

The choice between an extruder and a sheeter depends on the dough. Tell us:

  • which product and which dough recipe;
  • how many kilograms per shift;
  • whether you already have mixing equipment;
  • how much floor space the line can have.

Our engineer will propose the right configuration and prepare a quotation.
